I'd like to be able to switch into note mode instead of bullet mode

Is there any way I can toggle a section out of auto bullet mode into a type of notepad for block text? everytime I hit return I get a bullet

If hit return shift. I get a grey text that isn't always easy to see. Also hard to write in.

  I'd like this too, and I agree that the grey text is hard to see.
