How do I edit or delete tags?

A tag will only exist if it is used somewhere in your lists.  You can simply remove or edit one that has a typo and it will update.  If you've used a tag on a completed item, and if you have completed items set to be hidden, you'd have to make them visible and make your edits.  You can use search to locate any instances of a particular tag.

  When I click on the tag to try to delete or edit it, it activates it....and i can't delete it edit it.

  Have you tried to ALT+click the tag to delete it?

  To edit a tag, just position the cursor left or right to it and start editing.
